Dennis Champ suggested that Nicole try to create a Vallarta style Holiday meal by styling her abundance of Dorado into a turkey shape.  Well, patience is not one of Nicole's virtues and sculpting has never been her strong point so she failed at this task and (over) cooked a turkey like everyone else.  So, what is the fish cuisine of the month?  Something made with Dorado of course and it is pretty good. 

Dorado Teriyaki

4 fillets of Dorado
2 tbsp. Soy sauce
1 tsp. Red wine
Small slice of fresh ginger minced finely
A drop of honey
2 cloves garlic
Juice of 2 limes
Butter

Melt butter in a skillet and add garlic and ginger.  Sauté lightly until mixture is slightly cooked.  Remove from heat and add the soy sauce, wine, honey and lime juice.  Pour over Dorado fillets.  Let sit for 1 hour.


In a clean skillet, melt butter and sauté Dorado on medium high heat for no longer than 5 minutes per side basting with sauce.  Serve immediately with white rice.
